Item description
Slow Food's recipe series was missing a book that took stock of traditional seafood cuisine in Italy.
The opportunity was seized by Slow Fish, an event organized by Slow Food and dedicated entirely to fish, to create a work that catalogued and organized hundreds of recipes, an integral part of Italy's material culture The result is an anthology of gastronomic knowledge that is very useful for learning how to prepare the most typical seafood dishes of regional Italian cuisines.
With over three thousand kilometers of coastline ? but also hundreds of lakes and rivers ? and a centuries-old fishing tradition, Italy boasts a vast repertoire of fish, sea, lake, and river preparations. This book searches for varieties and forgotten preparations, for blends and flavors created when home and tavern cooks didn't know about sushi or tempura. Of each type, the culinary use is illustrated from north to south, from east to west, drawing a true culinary geography. Each dish has precise ingredients and preparation methods, so as to make it possible for non-experts to prepare it: a characteristic formula of the series Recipes from Osterie d'Italia.
