How would i get my fresh or dried fruits & or leaves to have a GTIN

You can’t. But not every category needs one — especially handmade items. Make sure you listed in an appropriate category. You should be able to put “Does not apply” (or something like that) into the data field.

For non edible items I put “Pre Owned” and that works, but for your items try “None”.
