Selection of raw materials: This is subject to rigorous standards. Maison Corsiglia selects top-quality chestnuts from Piedmont and Bourbon vanilla beans from Madagascar, not just flavoring. The chestnuts are hand-picked in Italy's finest forests and selected based on their size and appearance. Traditional and artisanal expertise: Once selected, the perfect chestnuts are placed in a cellar for three weeks, where they are turned daily with wooden shovels to complete the drying process. Wrapped in pairs in tulle muslin, the chestnuts are cooked in natural water and then candied for 7 to 10 days. The tulle wrapping limits excessive sugar absorption and keeps the chestnuts whole. The chestnuts are individually wrapped by hand in gold paper.
