Can be configured so that the buyer can only buy one product – no more ? And how to configure it in the listing ?

One of each item or just one item at a time…
IF you want them to only purchase one of an item, then set the quantity to one. After the purchase, the item can then be re-listed (this can be done from the invoice or in batch edit)
If it is to just purchase one thing in the entire bootg, then no there is no way to limit purchases to just one item in you booth
